I am sorry, but I have mixd feelings about this. Getting spit on will bring out the fighter in anyone, and while cops are supposedly held to a higher standard than others, they are, after all, humans. That said, I think sedation and anti-spit headgear should be mandatory for all deranged and violent suspects. Such a strategy would prevent a situation like this from ever developing.

There is a very simple method of restraining a person into one of those chairs, i taught it for years - no need for injuries-to anyone-no law suits to follow - and everyone ends up alive, uninjured and able to "go on with life" afterwards.
