He's actually not pissing it off. Gators have a reflex that when something touches the inside of their mouth, their jaws slam shut. That's why idiots routinely put their heads inside their mouths; as long as they don't touch anything, they are safe.

You can see what he's done wrong in the video and the instructor telling him what to do but he doesn't listen too well. You hear him say "on the way out" but he doesn't touch the inside of the mouth on the way out, he does it on the way in and then tries to retract. Simply not enough time to retract your arm it has to be on the way out.
